I baste with butter and WTF Wine turkey family shirt, which is how Julia Child told me to cook my roast chicken. My turkey is always juicy and moist with a beautiful brown, crispy skin. If it has worked for the 30+ years that I have been cooking turkeys, I am unlikely to change it because some food writer is trying to re-invent the process. Julia may not be with us anymore, but the French techniques she taught are as relevant today as they were 50 years ago.
